Vegan French Toast

What is your favorite brunch food? Pancakes? Waffles? Perhaps French Toast? If you’re a brunch fan, you’ve got to try this Vegan French Toast. While most French toast recipes call for eggs, this one it completely egg free (not to mention, also dairy free!). Don’t worry though, if you’re not in the mood for vegan french toast, you can make this the traditional way (eggs and dairy included!). I’ll share both options in this post!

Recipe:

  • 8 slices bread of choice

  • 1 cup unsweetened milk of choice (nut milk, oat, soy, regular milk, etc.)

  • 2 TBS chia seeds (or use 2 regular eggs instead)

  • 1 TBS pure maple syrup (or omit it to keep it sugar free)

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg (optional)

  • Coconut or olive oil for frying (or grass fed butter/ghee)

Directions:

  1. In a large bowl mix together the milk, chia seeds (or eggs), vanilla, cinnamon and nutmeg (optional).

  2. Add 4 slices of bread to the bowl and let them soak for a couple minutes.

  3. Meanwhile, heat a small amount of coconut or olive oil in a large skillet over medium heat.

  4. Transfer your soaked bread to the skillet and cook until crispy and no longer soggy, about 3-5 minutes a side.

  5. Meanwhile, soak the remaining bread slices in the milk mixture.

  6. Once the first batch is done, cook the remaining bread slices.

  7. Top your french toast with maple syrup, nut butter and fresh fruit!

See below for additional topping suggestions.

Topping Suggestions:

  • maple syrup, raw honey or date syrup

  • nut butter

  • melted chocolate chips

  • coconut flakes

  • chopped nuts

  • fresh fruit

  • coconut whipped cream

Bread Suggestions:

I love to use whole wheat, sprouted wheat, fresh sourdough or whole grain gluten free bread for my french toast! These options are full of fiber and nutrients, making them healthy and filling options.

What I love about french toast is that it’s actually a quite healthy brunch option! You’re getting healthy fats, protein, complex carbs and fresh fruit all in one meal! And there’s hardly any sugar (depending how much maple syrup you use).
