Chocolate Chia Seed Pudding (Dirt Pudding Edition!) – paleo, vegan, gluten free, low carb, and keto/sugar free friendly! Have you ever had dirt pudding? It was one of my favorite desserts growing up so I decided to make a healthier copycat version! You can simply make the classic chia seed pudding and top it with whatever toppings you want or make my dirt pudding version (highly recommended!). To keep this recipe sugar free/keto, see recipe notes below the recipe!
Pudding Ingredients:
1 cup unsweetened milk of choice (I used almond)
3-4 TBS raw honey or pure maple syrup
1 tsp pure vanilla extract
1/4 cup chia seeds
2 TBS cocoa powder
1/8 tsp sea salt
Instructions:
Add all of your ingredients to a high speed blender and blend until smooth (scrape down the sides of the blender with a spatula and blend again if needed until everything is completely smooth).
Taste your pudding. Add more sweetener if you want it sweeter, more milk if you want it runnier, or more chia seeds if you want it thicker! If adding any additional ingredients, blend again to combine.
Pour the chocolate pudding into 2 glass dishes and refrigerate for 2-3 hours until chilled.
To make it taste like dirt pudding, layer your chilled chocolate pudding with coconut cool whip/whipped cream and crumbled chocolate cookies! Here’s the cookie recipe I used.
For a classic chocolate pudding, simply enjoy the pudding alone or top it with your favorite toppings of choice (ideas below!).
Topping Ideas:
Crushed/chopped nuts
Unsweetened shredded coconut
Sliced fresh fruit
Nut butter
Dark chocolate chips
Cacao nibs
Yogurt
Whipped cream
Coconut cool whip
Granola
Recipe Notes:
If you don’t have a high speed blender, simply purchase ground chia seeds or grind chia seeds yourself in a coffee grinder before blending!
To keep the recipe sugar free, use sugar free maple syrup like Lakanto. You could also omit the liquid sweetener entirely and use 1 scoop of chocolate protein powder to sweeten the recipe!
If adding an unflavored CBN/CBD tincture to this recipe, simply add your desired serving size amount of CBN/CBD to the blender with the other ingredients before blending!
