
Watermelon, mint and lime slushie (with adult and kid friendly versions!). Who is down to try this? I know most of us are loving the transition to fall recipes, but there’s still a few of us trying to hold on to what’s left of summer! If you’re on of those people, this fruity slushie is perfect for you to sip during these final warm days.
This slushie is super easy to make, tastes absolutely delicious, and is so good for you! I love to throw this together when my watermelon is starting to get a little mushy or when I accidentally pick an overly ripe watermelon! It’s kid friendly and kid approved, but can also work well for an adult fiesta! See notes below!
If you’ve got any watermelon still hanging around, you’ve got to try this out. Here’s the recipe!
Ingredients:
4 cups diced ripe watermelon
Juice of 1 lime
10 fresh mint leaves (just the leaves)
Handful of ice cubes
Directions:
Add diced watermelon, lime juice, mint leaves and ice cubes to a high speed blender and blend for 30 seconds or until smooth (but not too watery).
Pour into 2 glasses and top with fresh mint leaves or a lime wedge.
Enjoy!
Notes:
Feel free time omit the lime juice and mint leaves if you prefer a pure watermelon slushee!
Try adding some tequila, rum or sparkling/seltzer water for a fancier drink!
Add a splash of maple syrup if your watermelon isn’t sweet enough on its own.
