Vegan Peppermint Cookies

Vegan Peppermint Cookies! Dairy tree, low carb, gluten free, and easily made keto! Are you ready to try these?

Anyone remember those Andes Mint Christmas cookies where you melt an Andes Mint on top of each cookie? This recipe is somewhat similar, expect it’s vegan, dairy free, low carb, gluten free, and low in sugar!

I know it’s not Christmas time, but I can eat Christmas cookies year round! Instead of melting Andes Mints on top of each cookie, I used Blissfully Better thin mint chocolates (naturally vegan, gluten free and low in sugar)! Blissfully Better chocolate is organic, gluten free, low glycemic and delicious! They have 2 vegan flavors – thin mint and toasted coconut (toasted coconut tastes like an almond joy!). They also have other flavors too! But for this recipe I just used the mint chocolate. If you don’t have these chocolates, just see the adaption below to make your own mint chocolate icing!

Alrighty, here’s the recipe:

Ingredients:

  • 1/2 cup almond flour

  • 1/4 cup coconut sugar (try monk fruit to keep it keto!)

  • 1/4 cup cocoa powder

  • 1 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/4 cup unsweetened almond milk

Icing:

  • 2 Blissfully Better mint thin chocolates

  • 1 tsp coconut oil

OR

  • 2 TBS chocolate chips

  • 1 tsp coconut oil

  • 1/4 tsp peppermint extract

Directions:

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

  2. Mix together almond flour, coconut sugar, cocoa powder, baking powder, salt and almond milk in a medium sized bowl.

  3. Drop the batter by the spoonful onto the parchment paper (should make 12 small cookies).

  4. Bake cookies for 12-14 minutes, until set but still soft.

  5. Meanwhile, melt your 2 mint thin chocolates in the microwave with 1 tsp of coconut oil (or melt your chocolate chips, peppermint extract, and coconut oil).

  6. Remove the cookies from the oven and lightly spread with your melted chocolate mixture.

  7. Enjoy!

Keto and Sugar Free Notes:

Use Lily’s Sweets chocolate chips to keep it keto/low carb and sugar free! You can also use monk fruit instead of coconut sugar to keep it keto and sugar free!
