PB&J Pancakes — 5 ingredient, high protein, vegan, berry oatmeal pancakes. Hear me out….imagine fresh berry pancakes layered with warm peanut butter, topped with homemade jam and drizzled with homemade berry sauce and melted peanut butter. Maybe some coconut whipped cream on top too….Sounds good, right?
If you’re not a PB&J fan, try topping these berry pancakes with fresh maple syrup or homemade chocolate sauce and fresh berries! The options are endless!
Ingredients:
1 cup rolled/old fashioned oats
1/4 cup protein powder (I used Nuzest pea protein)
2 TBS flaxseed meal/ground flaxseed
1 cup plant based milk
1 cup frozen berries of choice, microwaved until soft (I used mixed berry)
1 tsp baking powder (optional, but recommended)
Oil for cooking
Instructions:
Place all ingredients except oil into a small blender and blend until smooth.
Let stand 5-10 minutes until batter thickens. If batter is too thick to pour easily, add a little water.
Heat oil in a frying pan or skillet.
Pour batter, by 1/4 – 1/2 cup, into a pan and cook pancakes for 2-3 minutes on each side.
Top with peanut butter and homemade jam. Drizzle with extra peanut butter and homemade berry sauce and top with whipped cream!
Berry Sauce:
Microwave or heat some frozen berries until hot and juicy. Blend until smooth (add a little water if needed).
Variations & Toppings:
Try adding chocolate chips or fresh berries to the batter (after blending)
Try topping with raw honey or maple syrup, nut butter, homemade chocolate sauce, fresh jam, shredded coconut, coconut whipped cream or fresh fruit.
Omit the ground flaxseed and use 2 regular eggs instead. If using eggs, reduce the milk to 3/4 cup.
