
Who here doesn’t like simple, tasty and healthy recipes? These three ingredient protein pancakes are healthy, easy and delicious! They’re perfect as a post workout snack or as a light breakfast! I love to top mine with nut butter, sliced banana and homemade chocolate sauce!
What I love about this recipe is that it’s light, filling, and full of healthy carbs, fats and proteins. It makes a perfect small meal or snack in my opinion! Since it’s rather low carb, I usually eat this as a post workout snack instead of a full meal. Stay tuned though because I’ll be sharing another protein pancake recipe soon that works well for a full meal! Now, on to this recipe.
Ingredients:
1 banana
2 eggs
1/3 cup protein powder
Optional ingredients:
1/2 tsp vanilla
1/4 tsp baking powder
Chocolate chips (mix-in by hand)
Blueberries (mix-in by hand)
Directions:
Add all of your ingredients except your mix-ins to a small blender (I use a magic bullet) and blend until smooth. I like to blend for awhile so the eggs get whipped really well (it creates a more fully pancake consistency!).
Add in chocolate chips or blueberries (if using).
Warm coconut or olive oil on a medium sized skillet or griddle.
Cook pancakes for 2-3 minutes a side over medium heat.
Plate and top pancakes with toppings of choice. Enjoy!
Suggested Toppings:
Sliced fruit
Nut butter
Grass fed butter or ghee
Maple syrup
Drizzled honey
Melted chocolate chips
Homemade chocolate sauce
