Have you ever tried sweet potato toast? Sweet potato toast is the perfect gluten free, paleo and Whole30 breakfast idea. The potato slices make a delicious bread alternative and work well for both sweet and savory toast combinations! This takes just a couple minutes to whip up and seriously tastes so good!
I got this recipe from Holistic Nutritionist Riyana Rupani’s popular online program “Clean-in-15” and I just love it! It’s very healthy, easy and so delicious. I love how she makes clean eating super easy and super tasty! I added a couple of my own sweet potato toast topping ideas below her recipe for you to try as well. Give it a try!
Ingredients:
1⁄2 medium sweet potato
1⁄2 avocado, sliced or smashed with salt & pepper
Protein Options:
Cooked eggs (boiled, poached, scrambled, over easy)
Chickpeas or other lentils
Crumbled tempeh
Instructions:
Slice the sweet potato into 2-3 rounds, approx. 1/8″ thick.
Add slices to your toaster and toast on medium as many times as it takes to cook (usually 3-4 times depending on your toaster.)
Top with avocado and protein of choice.
My Favorite Topping Combinations:
•Peanut butter with sliced banana and a sprinkle of cinnamon
•Chia, flax or hemp seeds over mashed avocado
•Peanut butter & homemade jam
