
Single serve cinnamon roll bites — sugar free, vegan, gluten free, high protein and nut free! If you love cinnamon rolls but don’t love all the sugar, these sugar free, high protein cinnamon roll bites are for you! They’re sweetened with banana and protein powder (protein powder optional). They take just a couple minutes to whip up and require only a couple simple ingredients! Try them out the next time a sweet craving arises!
Cinnamon Roll Ingredients:
1/2 cup oat flour
2 TBS vanilla protein powder (or an additional 2 TBS oat flour)
1/2 ripe banana, mashed (see recipe notes for non banana options)
1/2 tsp vanilla extract
1/2 tsp baking powder
1/8 tsp sea salt
Cinnamon Sugar Filling:
coconut oil, vegan butter or grass-fed butter (softened)
cinnamon
granulated sweetener (stevia, monk fruit, coconut sugar, date sugar or brown sugar)
Icing Option #1:
1 TBS unsweetened yogurt of choice
Liquid sweetener of choice (2 tsp honey/maple syrup or a couple drops of liquid stevia)
Icing Option #2:
1 TBS unsweetened yogurt of choice
1 TBS vanilla protein powder
Milk or water (optional, to thin out the icing)
Instructions:
Preheat the oven to 350° and spray a small baking tray/dish with cooking spray.
While the oven is preheating, mix together your cinnamon roll ingredients in a small dish. The dough should shape up into a ball. If it’s too dry, add a bit of milk or water. If it’s too wet and sticky, add more oat flour or vanilla protein powder.
Lightly grease the counter with coconut oil, butter, or cooking spray and place your dough ball onto the greased counter.
Roll out the dough with a greased spoon or with your fingers until you have a small rectangular shape.
Lightly spread your coconut oil/butter over the dough and sprinkle with cinnamon and granulated sweetener of choice.
Using your fingers, gently roll up the dough (rolling the long side of the dough).
Slice your rolled dough into 4 small rounds and place them on your prepared baking dish.
Bake cinnamon roll bites for 15 minutes.
While your cinnamon roll bites are baking, whisk together your icing of choice in a small dish.
After 15 minutes, remove your cinnamon roll bites from the oven and let them cool for several minutes.
Plate your cinnamon roll bites and drizzle them with icing. Enjoy immediately!
Recipe Notes:
If you’re not a fan of banana in your recipes, try using 1/4 cup yogurt or applesauce instead of 1/2 a mashed banana!
