Frosted s’mores single serve sugar free protein PopTart! Vegan, sugar free, gluten free, and high protein! Protein optional. If you’re a fan of PopTarts, this healthier, single serve version is perfect for you. I used Organifi chocolate protein powder in my recipe (code RUTHANNE for 15% off). Get the recipe here!
Dough:
1/2 cup oat flour
2 TBS vanilla protein powder (or 2 TBS additional oat flour)
1/4 cup yogurt of choice (I used coconut)
1/2 tsp baking powder
1/8 tsp salt
Chocolate S’mores Mixture:
1-2 TBS yogurt of choice
1 TBS cocoa powder
1 TBS milk or water
1 TBS chocolate protein powder (or 1 TBS sweetener of choice — see notes below)
Instructions:
Preheat the oven to 350° and set aside a small baking tray.
In a small bowl mix together all of your dough ingredients until your mixture forms into a large ball.
Divide your dough ball into 2 equally sized smaller balls and roll them out on the counter to form two rectangles (I recommend rolling them out onto parchment paper).
In a small dish whisk together your chocolate s’mores mixture.
Spread most of your mixture (but not all) onto one of the dough rectangles, making sure to leave some room on the edges without the mixture (like a pizza crust).
Top your PopTart with mini marshmallows (optional).
Place the other dough rectangle on top of the first dough rectangle and press the edges together with a fork to seal the PopTart.
Place your PopTart (still on the parchment paper) onto a small baking tray and bake at 350° for 20 minutes.
Remove your PopTart from the oven after 20 minutes and let it cool for at least 5 minutes.
Spread the remaining chocolate s’mores mixture on top of your PopTart and drizzle with melted chocolate. Enjoy!
Recipe Notes:
Feel free to use a granulated sweetener like coconut sugar, brown sugar or monk fruit in the chocolate s’mores mixture instead of chocolate protein powder (or try stevia — just use much less). You can also use a liquid sweetener like honey or maple syrup in the chocolate s’mores mixture. You may need to add more cocoa powder or omit the water/milk if you use a liquid sweetener instead of a granulated sweetener!
