
Pancakes or waffles – which would you choose? If you’re team waffles, these pumpkin spice waffles are just what you need! These waffles can be made gluten and dairy free and are the perfect healthy breakfast or brunch option! They’re sweetened with bananas only, making them a perfect sugar free option. If you are looking for a wholesome and festive brunch recipe, this is it!
To all my pancake fans, I posted a pumpkin pancake recipe here! Try it out. Now, on to the waffles!
Ingredients:
1 1/2 cups flour of choice (whole wheat or gluten free will work)
1 cup milk of choice (I used almond)
2 TBS olive oil or coconut oil (melted)
1/2 cup canned pumpkin puree
2 bananas
2 eggs
1 tsp vanilla
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp pumpkin pie spice
Chocolate chips or chopped pecans (optional mix-in)
Directions:
Add all your ingredients to a high speed blender and blend until smooth. Stir in your mix-ins by hand (optional).
Spray your waffle iron with nonstick cooking spray and heat it up.
Add waffle batter to the waffle iron and cook waffles according to your waffle maker instructions.
Top with toppings of choice and enjoy!

Coconut whipped cream
