Pumpkin Spice Waffles AND Ice Cream! Who’s in? Do you ever get that waffles and ice cream craving? Waffles and ice cream is a classic combo and this pumpkin spice take on it just takes it up a whole new level. If you love pumpkin (and waffles and ice cream), you’re going to NEED to try this!
2 cups rolled oats
1 cup water
1 cup non-dairy milk
1 ripe banana
2 TBS maple syrup
1/4 tsp sea salt
1 tsp vanilla extract
2 tsp pumpkin pie spice
Place all ingredients into a blender and blend until smooth.
Let stand 15-20 minutes until batter thickens. If batter is too thick to pour easily, add a little water.
Heat waffle iron and coat with cooking spray.
Cook waffles accordingly!
Pumpkin Ice Cream:
1 (14oz) can full fat coconut milk
1/4 cup + 2 TBS maple syrup or honey (try sugar free maple syrup or liquid stevia to keep it sugar free)
1 cup pumpkin purée
1 tsp vanilla
3/4 tsp cinnamon
3/4 tsp pumpkin pie spice
Measure all your ingredients.
Blend your coconut milk, pumpkin purée, sweetener, vanilla extract and spices in a high speed blender or whip in a large bowl with an electric mixer.
Taste your ice cream mixture and add more sweetener or spices if desired.
Transfer your mixture to a freezer friendly dish (with a lid) and freeze for 6-8 hours. If you have an ice cream maker, you could transfer the mixture now and use that instead of freezing.
Remove from the freezer after 6+ hours and let it sit out for 5-10 minutes before scooping.
Waffles & Ice Cream:
Cook your waffles in a waffle iron according to the directions.
Scoop your pumpkin ice cream with an ice cream scoop and layer it between 2 waffle pieces.
Enjoy sandwich style (or use utensils if it’s too messy).
What do you think? Are you going to try this out? Or is it too crazy for you? This could be a perfect holiday dessert!
