Pumpkin Spice Waffles and Ice Cream

Pumpkin Spice Waffles AND Ice Cream! Who’s in? Do you ever get that waffles and ice cream craving? Waffles and ice cream is a classic combo and this pumpkin spice take on it just takes it up a whole new level. If you love pumpkin (and waffles and ice cream), you’re going to NEED to try this!

Waffles:

  • 2 cups rolled oats

  • 1 cup water

  • 1 cup non-dairy milk

  • 1 ripe banana

  • 2 TBS maple syrup

  • 1/4 tsp sea salt

  • 1 tsp vanilla extract

  • 2 tsp pumpkin pie spice

Directions:

  1. Place all ingredients into a blender and blend until smooth.

  2. Let stand 15-20 minutes until batter thickens. If batter is too thick to pour easily, add a little water.

  3. Heat waffle iron and coat with cooking spray.

  4. Cook waffles accordingly!

Pumpkin Ice Cream:

  • 1 (14oz) can full fat coconut milk

  • 1/4 cup + 2 TBS maple syrup or honey (try sugar free maple syrup or liquid stevia to keep it sugar free)

  • 1 cup pumpkin purée

  • 1 tsp vanilla

  • 3/4 tsp cinnamon

  • 3/4 tsp pumpkin pie spice

Directions:

  1. Measure all your ingredients.

  2. Blend your coconut milk, pumpkin purée, sweetener, vanilla extract and spices in a high speed blender or whip in a large bowl with an electric mixer.

  3. Taste your ice cream mixture and add more sweetener or spices if desired.

  4. Transfer your mixture to a freezer friendly dish (with a lid) and freeze for 6-8 hours. If you have an ice cream maker, you could transfer the mixture now and use that instead of freezing.

  5. Remove from the freezer after 6+ hours and let it sit out for 5-10 minutes before scooping.

Waffles & Ice Cream:

  1. Cook your waffles in a waffle iron according to the directions.

  2. Scoop your pumpkin ice cream with an ice cream scoop and layer it between 2 waffle pieces.

  3. Enjoy sandwich style (or use utensils if it’s too messy).
