This pumpkin spice smoothie bowl is a tasty and easy breakfast option and the best way to use up any leftover canned pumpkin you might have! Add some protein powder and you’ve got a protein packed pumpkin breakfast. This is my one last pumpkin recipe before everything turns Christmas themed!
Here’s how to make it. Recipe serves 2!
1 cup pumpkin purée
1/3 cup full fat canned coconut milk

3 frozen bananas
1/4 cup pecans
4 dates (omit if using sweetened protein powder)
2 tsp cinnamon
1 tsp vanilla extract
1-2 scoops unflavored or vanilla protein powder (I used Nuzest pea protein powder, use code RUTHANNE15 for 15% off)
Combine everything together in a high speed blender and blend until smooth.
Add more or less milk depending on how thick you want your smoothie bowls.
Pour into 2 bowls and top with toppings of choice (see recommend toppings below).
