Ingredients:
1/2 cup milk of choice (I used ADD JOI nut milk)
2-3 TBS maple syrup, honey or date syrup
1/3 cup pumpkin puree
1/4 tsp pumpkin pie spice
1/2 tsp cinnamon
1 TBS chia seeds
1 tsp vanilla
1 scoop vanilla or unflavored protein powder (optional; omit liquid sweetener if using a sweetened protein powder)
1/2 cup rolled/old fashioned oats
Directions:
Combine everything except the oats in a bowl or mason jar.
Add the oats and stir until well combined.
Let sit in the fridge for 60 minutes or overnight (overnight recommended).
In the morning top with fresh vanilla yogurt or whipped cream and chopped pecans!
Notes:
Use liquid stevia or sugar free maple syrup to keep it sugar free. OR, use a sweetened protein powder and omit the sweetener all together!
