Pumpkin spice french toast anyone? This easy peasy french toast recipe comes together in under 15 minutes and tastes like fall on a plate! It’s perfect for a weekend breakfast or brunch! It’s so easy, healthy and tastes delicious! Adding the pumpkin purée and pumpkin pie spice to the batter gives this recipe the perfect fall makeover. Top it with maple syrup and toasted pecans and you’re good to go! Here’s the recipe!
Ingredients:
3/4 cup milk of choice (I used almond milk)
3 large eggs
1/4 cup pumpkin purée
2 TBS maple syrup (optional)
1 tsp vanilla
1 1/2 tsp pumpkin pie spice
1/2 tsp cinnamon
1/4 tsp salt
8 slices bread of choice (gluten free, whole grain, sourdough, etc.)
Oil for cooking (I used coconut oil)
Recommended Toppings:
Maple Syrup
Coconut Whipped Cream
Toasted Pecans
Butter/Nut Butter
Fresh Berries
Directions:
In a large casserole dish mix together the milk, eggs, pumpkin purée, maple syrup, vanilla, pumpkin pie spice, cinnamon and salt.
Add a couple slices of bread to the bowl and let them soak for a couple minutes.
Meanwhile, heat a small amount of oil in a large skillet.
Transfer bread to the skillet and cook until well done on both sides, about 3-4 minutes a side.
Meanwhile, soak the remaining bread slices in the wet mixture.
Cook the remaining bread in some oil, same method as before.
Top french toast with maple syrup, nut butter, regular butter, toasted nuts and/or whipped cream!
