Pumpkin Spice Chia Seed Pudding! Gluten free, dairy free, vegan and low carb, this is such an easy and tasty fall themed breakfast, snack or dessert (plus, it’s so healthy too!). Chia seeds are an amazing superfood. They’re full of healthy fats and protein, as well as dietary fiber. They’re perfect for a nutritious breakfast!
Ingredients:
1 cup milk of choice
2 TBS maple syrup or honey (or use a sugar free sweetener to keep it low carb)
1 tsp vanilla extract
1/4 tsp pumpkin pie spice
1/3 cup pumpkin purée
1/4 cup chia seeds
Optional Toppings:
Crushed nuts (pecans would be great!)
Chocolate chips
Vanilla or regular yogurt
Coconut whipped cream
Directions:
Combine milk, sweetener of choice, vanilla, pumpkin purée, and pumpkin pie spice in a mason jar or bowl and mix well.
Add in chia seeds and stir until well combined.
Allow the mixture to sit in the fridge for at least 30 minutes (overnight works great if you’re making it the night before).
Remove from the fridge and top with whipped cream or yogurt and toppings of choice.
Enjoy immediately! Serves 1.
Recipe Notes:
Blend the chia seed mixture in a high speed blender before putting it in the fridge for a smooth and creamy chia seed pudding!
