Pina Colada Smoothie to ring in the New Year! You in? Vegan, virgin, and refined sugar free — this is the perfect festive drink! I used coconut milk, some coconut yogurt, frozen pineapple, coconut flakes and dates to make it. It’s super easy and so delicious. You can omit the dates and use vanilla protein powder instead for a delicious and nutritious high protein treat!
Here’s how to make it!
Ingredients:
1 cup frozen pineapple
1/2 cup coconut milk (I used Parrot Brand)
1/2 cup unsweetened coconut yogurt (see notes for other options)
2 TBS coconut flakes/shredded coconut (unsweetened)
3 dates or 1 scoop vanilla protein powder
Directions:
Add everything to a high speed blender and blend until smooth.
Add more coconut milk if needed.
Pour into a glass and top with coconut whipped cream and shredded, unsweetened coconut.
Enjoy immediately!
Variations:
Try adding a bit of rum for an adult beverage!
Try replacing some of the coconut milk with pineapple juice for an extra pineapple flavor boost.
Try using regular yogurt or full fat canned coconut milk in the place of the coconut yogurt.
Use any whipped cream on top (but I recommend my coconut whipped cream!)
