Peppermint Mocha Oatmeal Bowl! Where are my oatmeal fans at? If you’re a oatmeal fan, you’re going to love this. Even if you don’t like oatmeal, you might still love this! It’s slightly sweet, full of peppermint and mocha flavor, and perfect for Christmas or winter! This recipe is gluten free, dairy free, vegan, and can be made sugar free too. Read on for the recipe!
Ingredients:
1/2 cup rolled/old fashioned oats
2 TBS cocoa powder
1 1/2 cups milk or water
1-2 TBS maple syrup or honey (or try liquid stevia or chocolate protein powder to keep it sugar free!)
1 TBS instant coffee
The smallest drop of peppermint extract
Tiny pinch of salt
Toppings:
Vanilla yogurt: 1/3 cup unsweetened yogurt mixed with 1-2 tsp maple syrup/honey (or liquid stevia) and 1/2 tsp vanilla extract
Crushed candy cane

Directions:
Combine oats, water/milk, cocoa powder and salt (optional) in a small saucepan and cook on medium heat until cooked (about 5-10 min). Stir occasionally to avoid burning on the bottom.
Remove from heat and add in peppermint extract and instant coffee. Stir well.
Sweeten to taste.
Pour into a bowl and top with vanilla yogurt and crushed candy cane.

Enjoy hot or cold (I oddly loveee it cold!).
