Oatmeal Chocolate Chip Cookies! Vegan, gluten free, dairy free and refined sugar free, these delicious cookies can be whipped up in no time! They’re so soft and so chewy. Just to note, you can make these cookies sugar free by using monk fruit instead of coconut sugar and stevia sweetened chocolate chips instead of regular chocolate chips (I recommend Lily’s chocolate chips). Use gluten free oats and gluten free flour to keep it gluten free! Here’s the recipe.
Ingredients:
1 1/2 cups oats
1/2 cup whole wheat or gluten free flour
1/3 cup mini chocolate chips or 1/2 cup regular chocolate chips
1/2 cup coconut sugar
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla extract
1/4 cup coconut oil, melted
1/2 cup unsweetened applesauce
Directions:
Preheat your oven to 350 and line a baking sheet with parchment paper.
In a large bowl, mix together all of your dry ingredients.
Slowly add in your wet ingredients to the dry ingredients and mix again until fully combined.
Scoop your cookie dough with a cookie dough scooper and place on your lined baking sheet (recipe makes 1 dozen cookies).
Bake at 350 for 12 minutes.
Let them cool slightly before enjoying!
