
No added sugar peanut butter banana chocolate chip baked oatmeal — vegan and gluten free! Baked oatmeal is one of our favorite breakfast options — it’s so easy to grab on the go or to simply heat up and enjoy! This recipe is sweetened with bananas only but you can add some protein powder to the recipe to give it some extra sweetness and a major protein boost (see recipe notes for this option). Here’s the recipe!
Ingredients:
3 ripe bananas
2 cups plant based milk
1/2 cup peanut butter (or any nut butter)
1 tsp vanilla extract
3 cups rolled oats
1/2 tsp salt (use 1 tsp if your nut butter is unsalted)
1 tsp baking powder
1/3-1/2 cup chocolate chips
Directions:
Preheat the oven to 350 and grease a large baking dish with cooking spray.
Next, mash your bananas with a fork in a large bowl until smooth.
Add milk, nut butter and vanilla extract to the mashed bananas and mix until well combined.
Add in oats, salt, baking powder and chocolate chips and stir until thoroughly combined.
Pour oatmeal into your greased baking dish and bake at 350 for 1 hour.
Cool for 10-15 minutes before serving!
Recipe Notes:
We like to cut the baked oatmeal into squares and store them in the fridge for an easy on-the-go breakfast option! You can enjoy the oatmeal cold or heat it up in the morning!
Add a couple scoops of chocolate or vanilla protein powder to the batter before baking for a sweeter (and higher protein) oatmeal bake! Add 1/2 cup more milk to the recipe if you do.
if you like a sweeter oatmeal bake, add 1/4 cup honey or maple syrup to the recipe!
