Mini Cinnamon Rolls! Vegan, keto friendly, paleo, gluten free and dairy free! Looking for a holiday treat that tastes good and will leave you feeling even better? You’ve got to try out these mini cinnamon rolls! I’m all for indulgent holiday treats, but sometimes it’s nice to have some healthier options around too!
These mini cinnamon rolls can be made sugar free/keto, just see the recipe notes below! Here is the recipe!
Dough:
4 cups almond flour
1/2 cup coconut sugar
1 tsp baking soda
1 tsp baking powder
2 TBS coconut oil, melted
1 tsp vanilla
3 flax eggs (3 TBS flaxseed meal/ground flaxseed mixed with 1/2 cup water)
Cinnamon Sugar Topping:
2 TBS coconut sugar mixed with 2 tsp cinnamon
2 TBS coconut oil, softened
Icing Option 1:
3 TBS maple syrup mixed with 2 TBS coconut butter
Icing Option 2:
1/2 cup powdered sugar mixed with 1 TBS water
Directions:
In a large bowl mix together flaxseeds and 1/2 cup water and let sit for 10 minutes.
After 10 minutes add the remaining dough ingredients to the flax eggs and mix until a dough forms.
Divide the dough into 2 balls and refrigerate for 30 minutes.
After 30 minutes, remove 1 dough ball from the fridge and place on parchment paper on the counter. Cover the dough with another sheet of parchment paper and roll into a rectangular shape with a rolling pin. Don’t roll too thin.
Spread half of your softened coconut oil over the dough. Sprinkle with half of the cinnamon sugar mixture.
Gently roll up the dough with your hands to create a log shape.
Repeat steps 4-6 with the second dough ball.
Cut each dough log into 8 small rounds and place on a greased baking tray.
Bake at 350 for 18-20 minutes. Meanwhile, mix together your icing.
Remove cinnamon roll cookies from the oven and drizzle with icing of choice.
Sugar Free Notes:
Replace coconut sugar with monk fruit or xylitol (or another 1-1 sugar replacement).
Replace maple syrup/powdered sugar with sugar free maple syrup/powdered sugar.
Other Variations:
Try butter or vegan butter instead of coconut oil.
Try regular eggs instead of flax eggs.
Try brown sugar instead of coconut sugar.
