Vegan Mint Chocolate Chip Ice Cream

Vegan Mint Chocolate Chip! What’s your favorite ice cream flavor? Growing up, mine used to be Mint Chocolate Chip! Since ditching dairy a couple years ago, it’s been hard to find a solid dairy free mint chocolate chip ice cream alternative. Who can relate? Thankfully, times have changed and I’ve found just the replacement I’ve been looking for.

Let me introduce you to the perfect dairy free and vegan mint chocolate chip ice cream alternative. It’s made with coconut milk, requires only a couple ingredients, and it can easily be made keto/low carb!

Here’s how to make it!👇🏻

Ingredients:

  • 1 (14oz) can full fat coconut milk

  • 1/4 cup liquid sweetener of choice (maple syrup, honey, or a keto approved liquid sweetener – see notes below)

  • 3/4 tsp mint extract

  • 1/2 tsp spirulina powder (optional – to make it green!)

  • mini chocolate chips

  • A pinch of sea salt (optional)

Instructions:

  1. Measure out all your ingredients.

  2. Blend your coconut milk, sweetener, mint extract and spirulina powder in a high speed blender or whip in a large bowl with an electric mixer.

  3. Taste your ice cream mixture and add more sweetener if desired. Add mini chocolate chips to be mixture and stir them in gently with a spoon.

  4. Transfer your mixture to a freezer friendly dish (with a lid) and freeze for 6-8 hours. If you have an ice cream maker, you could transfer the mixture now and use that instead of freezing.

  5. Remove from the freezer after 6+ hours and let it sit out for 5-10 minutes before scooping.

  6. Serve and enjoy! Freeze any leftovers for later!

Notes:

  • Use a sugar free, liquid sugar replacement to keep it keto (if it’s not a 1-1 sugar replacement, adjust accordingly!)

  • Use sugar free chocolate chips to keep it keto and dairy free chocolate chips to keep it dairy free/vegan!

  • Use a high quality canned coconut milk brand or else the mixture might turn out a bit icy.
