
Ever in the mood for some hearty oatmeal pancakes? These make for the PERFECT weekend brunch recipe! I topped mine with maple syrup, diced strawberries, shredded coconut and some melted dark chocolate.
Ingredients:
1.5 cups rolled or old fashioned oats
1 cup gluten free or whole wheat flour
2.5 teaspoons baking powder
1 teaspoon salt
2 cups milk of choice (or water)
2 eggs (or use chia/flax eggs or egg replacer to keep it vegan)
2 tablespoons honey or maple syrup
1/4 cup olive oil or melted coconut oil/ghee
Additional oil for cooking
Directions:
In a large bowl, pour milk over oats and let stand until milk is absorbed (about 5 minutes).
In a small bowl, mix flour, baking powder, and salt.
Add two beaten eggs and dry ingredients to the milk mixture and combine.
Add 4 tablespoons melted oil to the mixture and stir again.
Heat a small amount of oil in a medium sized frying pan or skillet.
Pour batter, by 1/4 – 1/2 cup, into the pan and cook for 3-4 minutes on each side.

•Try adding blueberries, strawberries or chocolate chips to the pancake batter.
•Try topping with raw honey, maple syrup, melted chocolate, raw almond or peanut butter, fresh am, shredded coconut, or fresh fruit!
