
Need a quick and healthy weekend brunch recipe that will be sure to please the whole family? This healthy French toast is perfect to make!
I whipped up this recipe the other day and was reminded of how easy it is! I made our french toast with gluten free, whole grain toast to get those complex carbs in, but any type of bread will work! This is the perfect way to use up that bread that’s going old on your counter.
Ingredients:
8 slices toast
3 eggs (use chia or flax eggs to keep it vegan!)
1 cup almond milk
1 tsp vanilla
1 tsp cinnamon
1/4 tsp nutmeg
coconut oil for frying
maple syrup, nut butter and fresh fruit for topping
Directions:
In a large bowl mix together the eggs, milk, vanilla, cinnamon and nutmeg.
Add 4 slices of bread to the bowl and let them soak for a couple minutes.
Meanwhile, heat a small amount of coconut oil in a large skillet.
Transfer the soaked bread to the skillet and cook until well done on both sides (about 3 minutes a side).
Meanwhile, soak the remaining bread slices in the egg/milk mixture.
Cook the remaining bread in some coconut oil, using same method as before.
Top your french toast with maple syrup, nut butter and fresh fruit!
