Healthy Edible Cookie Dough! Vegan, paleo, gluten free, high protein and sugar free friendly! Have you ever heard of cookie dough made from chickpeas? It’s so good — I promise you! It has the same consistency as regular cookie dough, but it’s better for you! Save this recipe, give it a try, and let me know what you think!
Ingredients:
1 (14oz) can cooked chickpeas (rinsed and drained)
1/3 cup nut butter of choice (I used almond)
1/3 cup honey or maple syrup (use sugar free maple syrup if you need to keep it sugar free)
1 tsp vanilla extract
1/4 – 1/2 cup vanilla protein powder (optional — see notes)
1/2 cup chocolate chips
1/4 tsp salt
Directions:
Combine all your ingredients in a food processor and process until smooth (see notes for blender instructions).
Once a smooth batter is formed, stir in chocolate chips by hand.
Scoop into desired serving sizes and enjoy right away or refrigerate until serving!
Notes:
If you don’t have/use protein powder, try using almond flour instead.
To bake this cookie dough, add 1 1/2 tsp baking powder to mixture and bake cookies at 350 for 15 min!
If using a blender, blend together everything but the protein chocolate chips and protein powder. Stir them both in by hand!
