
Healthy chocolate muffins! Vegan, gluten free, and sugar free friendly! If you love chocolate and you love muffins, these are the perfect treat for you! They’re soft, fluffy, and so delicious. Get the recipe below!
Ingredients:
1 1/2 cups flour of choice (whole wheat, gluten free, or regular)
1/2 cup cocoa powder
1 1/2 tsp baking powder
1 tsp salt
2 flax, chia or regular eggs
1 cup maple syrup (or use sugar free maple syrup to keep it sugar free)
2 TBS olive oil (or coconut oil, butter or ghee, melted)
1 cup unsweetened plant based milk
2 tsp vanilla extract
1/2 cup mini chocolate chips (optional)
Instructions:
Preheat the oven to 350 degrees and grease your muffin tins with cooking spray. Recipe makes about 15-18 large muffins.
Combine the dry ingredients in a large dish and mix well until combined.
Combine all of your wet ingredients in a seperate medium sized dish and whisk well until smooth.
Add your wet ingredients to the dry ingredients and whisk gently until the batter is smooth.
Stir in 1/2 cup chocolate chips, if using.
Divide the batter evenly between your prepared muffin tins.
Bake muffins for 25 minutes or until a toothpick inserted in the center comes out clean.
Cool the muffins for 5-10 minutes in the tins before eating. Enjoy!
Recipe Notes:
To keep the recipe sugar free, simply use sugar free maple syrup like Lakanto and sugar free chocolate chips like Lily’s.
To keep the recipe vegan, use 2 flax or chia eggs.
To keep the recipe gluten free, simply use a 1-1 gluten free flour replacement.
