Ingredients:
1/3 cup unsweetened yogurt
2/3 cup unsweetened milk of choice
1/2 cup unsweetened applesauce
1/2 cup honey or maple syrup
1 tsp vanilla extract
1/4 cup olive oil
2 cups oat flour
1/2 tsp salt
1/2 tsp baking soda
1 tsp baking powder
2 TBS flaxseed
1/2 cup mini chocolate chips
Instructions:
Preheat the oven to 350ยฐ and line 12 muffin tins with cupcake liners. Gently spray the cupcake wrappers with cooking spray. The cupcake wrappers are optional โ if you do not use them, make sure you spray the muffin tins well with cooking spray!
While the oven is preheating, whisk together your wet ingredients in a large bowl.
In a medium sized bowl, combine your dry ingredients and stir until fully combined.
Slowly add your dry ingredients to your wet ingredients, whisking well until smooth and there are no chunks.
Divide your batter evenly between the 12 muffin tins.
Bake muffins at 350 for 25 minutes.
Recipe Notes:
To keep the recipe sugar-free, simply use sugar free maple syrup.
If you want to omit the flaxseed in this recipe, simply add two regular eggs to the recipe and decrease the milk to 1/3 cup.
To make the muffins mini, simply divide the batter between your mini muffin tins and bake the muffins for 15-20 minutes!

I had to try these delicious muffins as soon as I saw them. Made them today to meal prep for the week. Since I had all the ingredients on hand it was a breeze to put together. Followed the recipe exactly as written except I added 1/2 tsp cinnamon and 1/3 cup chopped walnuts. The kids loved it and we will add it to our rotation. Thank you Ruth! Hello, I’ve tried a few of your recipes and they are amazing!!! I have a gluten allergy so your page was truly a blessing. Real quick, can I use baking soda instead of baking powder??

I love to hear that!! ๐ Baking soda is not an equal substitute for baking powder but if you are out of baking powder, you can try using baking soda instead and see how it turns out. I would use 1/3 tsp baking soda for every 1 tsp baking powder. And I would add 1 tsp lemon juice to the recipe so that the baking soda has something to react with! ๐
