  1. I had to try these delicious muffins as soon as I saw them. Made them today to meal prep for the week. Since I had all the ingredients on hand it was a breeze to put together. Followed the recipe exactly as written except I added 1/2 tsp cinnamon and 1/3 cup chopped walnuts. The kids loved it and we will add it to our rotation. Thank you Ruth! We tried several of your recipes already and they are always amazing.

  2. Hello, I’ve tried a few of your recipes and they are amazing!!! I have a gluten allergy so your page was truly a blessing. Real quick, can I use baking soda instead of baking powder??

I love to hear that!! ๐Ÿ™‚ Baking soda is not an equal substitute for baking powder but if you are out of baking powder, you can try using baking soda instead and see how it turns out. I would use 1/3 tsp baking soda for every 1 tsp baking powder. And I would add 1 tsp lemon juice to the recipe so that the baking soda has something to react with! ๐Ÿ™‚
