Gingerbread Bliss Balls! High in protein and refined sugar free, these gingerbread bliss balls are so delicious AND so nutritious. Naturally sweetened with dates, full of fiber and healthy fats, and loaded with protein, these bliss balls are a perfect pre/post workout snack! All you need are some dates, nuts/nut butter, oats, protein powder and gingerbread spice. Here’s the recipe!
Ingredients:
1 cup cashews (or any nut)
1 cup rolled/old fashioned oats (or try almond flour to keep it paleo)
10 pitted large medjool dates
1/4 cup cashew butter (or any nut butter)
1/2 cup unflavored or vanilla protein powder (I use Nuzest pea protein powder, use code RUTHANNE15 for 15% off)
2 tsp gingerbread spice
1 tsp salt (if using unsalted nuts/nut butter)
1 tsp vanilla extract (optional)
Instructions:
Add all ingredients except nut butter to a food processor and process until smooth. Add nut butter and process some more.
Test the batter. It should be able to roll into balls without falling apart. If it’s too dry, add more nut butter. If it’s too oily, add more protein powder.
Roll into balls using the palms of your hand and store in a glass container or dish.
Enjoy immediately or refrigerate until serving. Makes 12 balls.
Enjoy within a week or freeze for later use. Store in the fridge!
