Do you prefer eating raw cookie dough batter straight from the bowl or waiting to eat freshly baked cookies? If you’re team raw cookie dough, this recipe is for you! To make this edible cookie dough even better (is that even possible?!), this recipe is naturally gluten free, vegan, dairy free and paleo (and it can easily be made keto or sugar free)!
I whipped up this edible cookie dough for another recipe I am working on – Vegan Double Dunker Ice Cream (coming soon!). It’s so easy and so delicious that I decided to share it here for all my cookie dough lovers. If you’re ready for an easy, healthy and delicious cookie dough recipe that you can eat straight from the bowl with a spoon, save the recipe and try it!
Ingredients:
1/4 cup coconut flour
1/2 cup almond flour
1/4 cup dairy free milk
3-4 TBS maple syrup or honey (see notes for sugar free/keto version)
2 tsp vanilla extract
1/4 cup chocolate chips or cacao nibs (I use Lily’s Sweets chocolate chips)
1/8 tsp salt
Directions:
Mix all ingredients in a medium sized bowl until well combined.
Refrigerate until serving or enjoy immediately.
To serve, scoop with a cookie dough scooper and serve in small dishes or enjoy straight from the bowl with a spoon!
Notes:
To make this keto/sugar free, simply use monk fruit or stevia instead of maple syrup and add a bit more milk (about 3-4 TBS)! Use sugar free or stevia sweetened chocolate chips in the place or regular chocolate chips. I love Lily’s Sweets chocolate chips!
I hope you try this out and enjoy! Would you want to see a baked version of these cookies? Let me know in the comments!
