Double Chocolate Strawberry Baked Oatmeal! Vegan, gluten free, dairy free and sugar free friendly, this baked oatmeal is a delicious and nutritious breakfast option! We like to make this at the beginning of the week and use it for breakfast all week long! It’s a great meal prep breakfast option. Get the recipe below!
Ingredients:
3 cups rolled/old fashioned oats
1/4 cup cocoa powder
1/4 cup chia seeds
1/4 cup protein powder (chocolate or vanilla would work great!)
1/4 tsp salt
1 1/2 tsp baking powder
3 cups milk of choice
1/4 cup maple syrup (see notes for sugar free option)
1/4 cup coconut oil, melted
1 tsp vanilla extract
1/3-1/2 cup chocolate chips
1 cup sliced strawberries
Directions:
Pre-heat your oven to 350 degrees and grease an 8″ x 8″ or “9 x 13” oven-safe dish with baking spray.
In a medium sized bowl mix together your dry ingredients until well combined.
In a large dish, mix together your wet ingredients until well combined.
To the wet ingredients add your dry ingredients and mix until fully combined.
Pour into prepared baking dish and bake for 40-45 minutes, until the center is firm.
Enjoy warm or let it cool completely if storing for future use.
Notes:
We like to cut the baked oatmeal (once cooled) into bars/squares and use them for a meal prepped breakfast options.
Serve warm with melted chocolate, strawberry sauce (I used Wabry organic, no added sugar strawberry syrup) and warm almond milk!
If omitting the sweetened protein powder, add an additional 1/4 cup cocoa powder and some more maple syrup to taste.
Use sugar free maple syrup to keep it sugar free if necessary!
