Double Chocolate Baked Donuts!

Decadent Double Chocolate Baked Donuts! Who’s down for this vegan, gluten free, nut free and sugar free friendly donut recipe? We adore this recipe and I know you will too! See recipe notes below the recipe for gluten free, nut free and sugar free options. Here’s the recipe!

Ingredients:

  • 1 1/2 cups whole wheat flour

  • 1/2 cup cocoa powder

  • 1 1/2 tsp baking powder

  • 1 tsp salt

  • 2 eggs (flax, chia or regular)

  • 1 cup maple syrup

  • 2 TBS olive oil or melted coconut oil

  • 1 cup unsweetened plant based milk

  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350 and spray your donut pans with cooking spray. I used 3 donut pans.

  2. Combine the dry ingredients in a large dish and mix well.

  3. Next, combine your wet ingredients in a medium sized dish and whisk well.

  4. Add your wet ingredients to the dry ingredients and whisk until the batter is smooth.

  5. Pour the batter into your greased donut pans (recipe makes 18 donuts).

  6. Bake donuts at 350 for 12-14 minutes.

  7. Let the donuts cool for 5 minutes before removing from the pans.

  8. Dip donut tops in preferred chocolate icing (see below) and enjoy!

Icing Option 1:

  • 2/3 cup cocoa powder

  • 2/3 cup maple syrup

Directions:

1. Whisk everything together until smooth!

Icing Option 2:

  • 1 cup chocolate chips

  • 1 TBS coconut oil

Directions:

  1. Melt chocolate chips and coconut oil together (in the microwave or on the stovetop) and whisk until smooth.

Recipe Notes:

  1. Use a 1-1 gluten free flour replacement in this recipe to keep it gluten free. Oat flour might work as well.

  2. Use olive oil in the recipe instead of coconut oil for a nut free recipe.

  3. Use 2 flax or chia eggs in the recipe to keep it vegan! To make 1 flax or chia egg simply combine 1 TBS flax or chia seeds with 2.5 TBS water and let it sit for 10 minutes before adding to the recipe. Make sure you use 3 flax/chia eggs for this recipe!
