
Another healthy brunch recipe coming your way – Crispy Belgium Waffles! Vegan, whole grain, & dairy free options available!
These Belgium waffles are the most delicious waffles I’ve ever had. They are fluffy, light, crispy and not too heavy. You can make them sourdough (like I do!) or regular. The sourdough version makes these waffles so light and fluffy, but a regular version works fine too.

Here’s the recipe (sourdough and regular version) 👇🏻
Ingredients:
•2 cups active sourdough starter/discard (or just use 2 cups of flour of choice mixed with 2 cups of milk of choice for a non sourdough version)
2 eggs (try chia/flax eggs to keep it vegan!)
2 TBS honey/maple syrup
1/2 tsp vanilla
1/4 cup coconut oil, ghee or butter, melted
2 TBS ground flax or chia seed (omit for non-sourdough version)
1 tsp baking soda (use 2 tsp baking powder instead for non-sourdough version)
1/2 tsp salt
1/4 tsp cinnamon
Directions:
Heat up your waffle iron (I used a medium setting) and spray it with non-stick cooking spray.
Combine sourdough starter (or just flour and water), eggs, and melted butter/oil together in a large dish.
Add remaining ingredients and mix well.
Cook your waffles and enjoy!

Fresh fruit
Maple syrup/honey
Coconut cream or whipped cream
Nut butter
Melted chocolate
Coconut flakes
