
Ever get tired of paying a fortune for a healthy snack bar at the grocery store? I know I do!
One of my favorite snack bars is RX bars. Unfortunately, they often run close to $2 a bar! I took the liberty of recreating the recipe at home and they turned out really good! This is the perfect healthy snack, dessert or breakfast option.
This recipe is packed with protein, healthy fats, fiber, and nutrients. It’s super healthy, convenient and tastes delicious! Here’s the written recipe!👇🏻
Ingredients:
1 pound medjool dates (pitted)
1 cup raw cashews
1 cup raw almonds
1/3 – 1/2 cup nut butter
1 cup egg white protein powder
1/2 cup cocoa powder
Sea salt (to sprinkle on top)
Chocolate chips (optional)
Directions:
Process almonds and cashews together in a food processor until a flour consistency is formed.
Add dates and process again.
Add cocoa powder and egg white protein powder and process again.
Add 1/3 cup almond butter and process.
If the mixture is sticky and forms into balls, you’re set. If not, add more almond butter until a sticky “dough” forms.
Scrape the mixture into a glass dish lined with parchment paper and sprinkle with sea salt.
Refrigerate for at least 1 hour.
Cut into squares and enjoy!
Optional:
Sprinkle chocolate chips onto the bars at the same time as the sea salt and press them firmly down so they don’t fall off! 🍫
Storage:
Store in the fridge for 1 week or in the freezer for 2-3 months.
