Copycat Old Fashioned Donuts! Vegan, refined sugar free and gluten/sugar free friendly! These delicious donuts are a non-fried, much healthier version of the traditional old fashioned donuts! They’re light and fluffy and full of delicious flavor. They’re best enjoyed straight from the oven when they’re warm and the house smells like a bakery! To keep the recipe sugar free or gluten free, see the recipe notes below the recipe.
Donut Ingredients:
2 cups whole wheat flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
2 TBS olive oil
1/2 cup honey or maple syrup
1/2 cup unsweetened yogurt
1/2 cup unsweetened applesauce
1 cup unsweetened milk of choice
1 tsp vanilla extract
Instructions:
Preheat the oven to 400° and grease your donut pans with cooking spray (recipe makes 12-18 donuts).
While the oven is preheating, combine all of your dry ingredients in a large dish and stir to combine.
In a smaller bowl, whisk together your wet ingredients until well combined.
Slowly add your wet ingredients to your dry ingredients, whisking well to combine.
Once fully mixed, slowly pour your donut batter into your donut pans, evenly diving the batter between the donut molds. Recipe makes 12 large donuts or 18 medium sized donuts.
While the donuts are baking, prepare your icing (see instructions below).
Bake donuts for 12-16 minutes, depending on the size. Make sure they are fully cooked! You can check by inserting a toothpick into a donut. If it comes out clean, they are fully cooked!
Remove donuts from the oven once fully cooked and let them cool in the pans for 5 minutes.
After 5 minutes, remove donuts from the donut molds and gently dip each warm donut into the prepared glaze.
Place the glazed donuts on a cooling rack to cool.
Enjoy donuts immediately (while hot!) or enjoy at a later time. To reheat the donuts, simply place them in the microwave for 30 seconds or in the oven at 400° for 5 minutes!
Store in the fridge for 5-7 days!
Glaze Ingredients:
1/4 cup coconut butter (if you don’t have coconut butter, see recipe notes below)
1/4 cup honey or maple syrup
1/4 cup unsweetened milk
2 TBS unsweetened yogurt
Icing Instructions:
Place your coconut butter in a medium sized dish and microwave it for 30 seconds, or until smooth and melted.
Add your sweetener, milk and yogurt to your warmed coconut butter and whisk well, until smooth.
Recipe Notes:
To keep the recipe gluten free, use a 1-1 gluten free flour replacement. You can also use oat flour (if you use oat flour, only use 1/2 cup of milk in this recipe).
To keep the recipe sugar free, use a sugar free maple syrup like Lakanto!
If you don’t have coconut butter, feel free to use any other nut butter. It will just slightly alter the taste!
