Anyone need a 2-minute, healthy chocolate fix that won’t spike your blood sugar? This recipe can be made dairy free, gluten free, vegan, low carb/keto, and nut free! See my recipe notes below for the dietary adaptions!
If this recipe seems familiar, it’s because I shared it a couple weeks back. I thought it would be fun to share it again – but this time with coconut flour instead!
Ingredients:
2 TBS coconut flour
2 TBS cocoa powder
1/4 tsp baking powder
1/8 tsp salt
3 TBS milk of choice
1 egg
1-2 TBS honey or maple syrup
1 TBS nut butter, coconut oil or grass fed butter (peanut butter is soo good!)
1/4 tsp vanilla (optional)
Chocolate chips
Toppings of choice (chopped nuts, diced fruit, drizzled nut butter, whipped cream, ice-cream, etc.)
Directions:
Combine dry ingredients in a large mug and mix well.
Add wet ingredients and mix again.
Add a handful of chocolate chips (if using).
Microwave for 1.5-2 minutes until it’s fully cooked.
Top with additional chocolate chips and spread as icing.
Optional – melt 1 TBS chocolate chips and 1 tsp coconut oil in a separate bowl and pour over the top for chocolate lava!
Add any toppings of choice and enjoy!
Dietary Adaptions:
Vegan:
Use a chia or flax egg, almond milk, maple syrup and dairy free chocolate chips
Low Carb/Keto:
Use coconut flour, a low carb/keto approved sugar substitute, and sugar free chocolate chips
Nut Free:
Use sunflower seed butter or regular butter in the place of the nut butter/coconut oil
Egg Free:
Use a flax/chia egg instead of regular eggs
Dairy Free:
Use almond milk, coconut oil and dairy free chocolate chips
