Healthy Power Balls!

7 Ingredient Healthy Power Balls! Vegan, gluten free and sugar free friendly, these power balls are the perfect breakfast, snack or healthy treat! I like to make a big batch of these all at once and store them in the freezer for a couple of months. I just grab a couple of balls straight from the freezer whenever I need them! Recipe makes 12 balls.

Ingredients:

  • 1 cup rolled/old fashioned oats

  • 1/2 cup nut butter of choice

  • 1/4 cup honey or pure maple syrup (try sugar free maple syrup to keep it sugar free)

  • 1/4 cup chia seeds

  • 1 tsp vanilla

  • 1/2 tsp salt

  • 1/2 cup chocolate chips

Directions:

  1. Combine your nut butter, sweetener, vanilla and salt in a large bowl and mix until smooth.

  2. Add in your oats, chocolate chips and chia seeds and stir until fully mixed.

  3. Form your mixture into little balls and place on a dish/tray lined with wax or parchment paper.

  4. Refrigerate or freeze power balls for an hour until firm.

  5. Store in tupperware of choice or in a ziplock baggie in the fridge for a week or in the freezer for 2-3 months!

  6. Enjoy straight from the fridge/freezer!

Recipe Notes:

  • Feel free to add 1 TBS cocoa powder to the recipe for a double chocolate version! Add another TBS of nut butter to the recipe if you do!
