
Ready for some tasty, healthy and extremely easy to make flourless chocolate chip cookies? They’re paleo, vegan, gluten free and sugar free friendly! Plus, they’re high in plant based protein. Get the recipe for these chickpea chocolate chip cookies here!
Ingredients:
1 (14oz) can cooked chickpeas (rinsed and drained)
1/3 cup nut butter of choice (I used almond)
1/3 cup honey or maple syrup (use sugar free maple syrup if you need to keep it sugar free)
1 tsp vanilla extract
1/4 – 1/2 cup vanilla protein powder (optional — see notes)
1/2 cup chocolate chips
1/4 tsp salt
1 1/2 tsp baking powder
Directions:
Combine all your ingredients in a food processor and process until smooth (see notes for blender instructions).
Once a smooth batter is formed, stir in chocolate chips by hand.
Scoop batter into cookie dough balls and place on a tray lined with parchment paper.
Bake at 350 for 15 minutes, or until set.
Notes:
If you don’t have/use protein powder, try using almond flour instead.
If using a blender, blend together everything but the protein powder and chocolate chips. Stir those in by hand!
