
Have you ever had chia seed pudding? It’s perfect for breakfast, a snack, or a healthy dessert. My recipe is gluten free, dairy free, vegan and refined sugar free. It can also be made low carb or keto if you use a sugar free or low carb sweetener. Get the recipe below, it serves 2-3!
Ingredients:
1 cup unsweetened almond milk (regular or vanilla) or raw grass fed milk (for dairy drinkers!)
6 TBS chia seeds
1/4 cup honey or maple syrup or low carb sweetener of choice
2 TBS cocoa powder
1/8 tsp salt
1 tsp vanilla extract
Directions:
Add everything to a high speed blender (ninja or vitamix) and blend until smooth.
Scrape down the sides and blend a bit longer if needed.
Pour the pudding into a dish and refrigerate for 2-3 hours until chilled.
Serve chilled with your favorite toppings!
Recommended Toppings:
Crushed/chopped nuts
Unsweetened shredded coconut
Peanut or almond butter drizzle
Dark chocolate chips
Yogurt
Whipped cream
Granola
Notes:
If you don’t have a high speed blender simply purchase ground chia seeds or grind chia seeds in a coffee grinder before blending everything together. If you use ground chia seeds you will need a little less (4-5 TBS).
Keeps in the fridge for 4-5 days!
