Chia Seed Pudding

Have you ever had chia seed pudding? It’s perfect for breakfast, a snack, or a healthy dessert. My recipe is gluten free, dairy free, vegan and refined sugar free. It can also be made low carb or keto if you use a sugar free or low carb sweetener. Get the recipe below, it serves 2-3!

Ingredients:

  • 1 cup unsweetened almond milk (regular or vanilla) or raw grass fed milk (for dairy drinkers!)

  • 6 TBS chia seeds

  • 1/4 cup honey or maple syrup or low carb sweetener of choice

  • 2 TBS cocoa powder

  • 1/8 tsp salt

  • 1 tsp vanilla extract

Directions:

  • Add everything to a high speed blender (ninja or vitamix) and blend until smooth.

  • Scrape down the sides and blend a bit longer if needed.

  • Pour the pudding into a dish and refrigerate for 2-3 hours until chilled.

  • Serve chilled with your favorite toppings!

Recommended Toppings:

  • Crushed/chopped nuts

  • Unsweetened shredded coconut

  • Peanut or almond butter drizzle

  • Dark chocolate chips

  • Yogurt

  • Whipped cream

  • Granola

Notes:

  • If you don’t have a high speed blender simply purchase ground chia seeds or grind chia seeds in a coffee grinder before blending everything together. If you use ground chia seeds you will need a little less (4-5 TBS).

  • Keeps in the fridge for 4-5 days!
