Blended baked oatmeal cake! Have you tried this new trend out?! We’ve been doing it non-stop and we love it! It’s such a fun new way to eat oatmeal for breakfast (it literally tastes like cake for breakfast!). I should have thought of blending my baked oatmeal before. Today’s flavor is chocolate chip! Feel free to add 1 TBS cocoa powder to the batter for a double chocolate version! This recipe serves one.
Ingredients:
1/2 cup old fashioned/rolled oats
1/2 ripe banana
1 TBS nut butter of choice
1 TBS chia seeds or 1 egg
1/4 cup milk of choice
1 TBS maple syrup/honey
Chocolate chips
1/2 tsp baking powder
1/2 tsp vanilla extract
1/8 tsp salt
Directions:
Add everything (except the chocolate chips) to a high speed blender and blend until smooth and creamy.
Stir in chocolate chips by hand.
Spray a small ramekin/baking dish with cooking spray.
Pour your oatmeal batter in your baking dish/ramekin and top with additional chocolate chips.
Bake at 350 for 20 min, or until fully cooked.
Enjoy straight from the dish! We like to add some warmed milk on top of ours.
Recipe Notes:
Feel free to replace the maple syrup with a sugar free sweetener to keep it sugar free (sugar free maple syrup, liquid stevia, etc.)
Feel free to omit the maple syrup and add in a spoonful of chocolate or vanilla protein powder instead to sweeten it!
Get creative with flavors and mix-ins: protein powder, cocoa powder, nuts and seeds, dried fruit, fresh fruit, coconut flakes, etc.!
