
Banana cream pie protein pudding! Keto, vegan, paleo, sugar free, gluten free and high protein (protein optional!). If you’re a banana creme pie fan, you’ll love this single serve pudding recipe! It’s so easy to whip up, super tasty, and really healthy! This is the perfect breakfast, snack or dessert. I used Organifi vanilla protein powder in my recipe (code RUTHANNE for 15% off).
Pudding Ingredients:
1/4 cup unsweetened yogurt of choice ( I used coconut yogurt)
1 TBS vanilla protein powder or another sweetener of choice (see notes below)
1/2 tsp vanilla extract
Pinch of sea salt
Crumble Ingredients:
2 TBS almond or oat flour (or any other flour of choice)
1-3 tsp water or melted oil/butter of choice
1 TBS vanilla protein powder or 1-2 tsp granulated sweetener of choice (see notes below)
Pinch of sea salt
Other Ingredients:
Banana (1 used 1/2 a banana)
Whipped cream (1 used 3 TBS coconut whipped cream)
Instructions:
Preheat the oven to 350° and line a small baking tray with parchment paper (or simply spray it with cooking spray).
Mix together your crumble ingredients in a small dish until crumbly and slightly wet. Mix together the dry ingredients first and slowly add your water/oil until you get a crumbly consistency (not a dough, a crumble!).
Spread your crumble out onto your prepared baking tray and bake for 5-10 minutes, until browned and slightly crispy.
While the crumble is baking, whisk together your vanilla pudding ingredients in a separate small dish.
Remove your crumble from the oven after 5-10 minutes and let it cool for several minutes.
Once your crumble has cooled, assemble your pudding in your dessert dish (I like to layer mine!).
Add about half of your crumble mixture to the bottom of a dessert dish and top with half of your pudding mixture. Top pudding with some whipped cream and thinly sliced banana pieces. Repeat the layers with your remaining ingredients!
Enjoy immediately or refrigerate until serving. This recipe serves 1!
Recipe Notes:
Feel free to use a liquid or granulated sweetener for the vanilla pudding if you are omitting the protein powder (e.g. maple syrup, honey, coconut sugar, monk fruit, etc.). Or you can also use liquid stevia or granulated stevia (just use much less than 1 TBS because it is so much sweeter!).
If you are omitting the protein powder from the crumble, make sure you use a granulated sweetener like coconut sugar or monk fruit (or granulated stevia, just use less than 1 TBS!).
