These apple pie pancakes are super healthy and super tasty! They are perfect for the holidays. Read on for the recipe!
Here’s what you’ll need.
Your favorite pancake mix/recipe (or try my favorite pancake recipe)
Apples
Coconut oil (or butter)
Cinnamon
Unsweetened yogurt
Maple syrup (or honey)
Vanilla extract
Peanut butter (or other nut butter)
Pancakes:
Whip up the batter of your favorite pancake recipe/mix (see mine here).
Add 1-2 tsp cinnamon to the batter.
Cook pancakes according to the directions.
Apple Compote (serves 1):
Dice 1/2 apple and sauté in coconut oil/butter and cinnamon (use 1 tsp coconut oil and 1 tsp cinnamon per 1/2 apple).
Sauté until soft but not mushy.
Vanilla Yogurt Topping (serves 1):
Mix 1/4 cup unsweetened yogurt with 1 TBS maple syrup or honey and 1/2 tsp vanilla extract.
Directions:
Top cooked pancakes with vanilla yogurt and apple compote and drizzle with maple syrup and warmed peanut butter (or use any other nut butter).
