Almond Joy Oatmeal Bowl! Vegan, gluten free, dairy free and refined sugar free! If you’re looking for a healthy breakfast option — oatmeal is one of my favorites! Plain oatmeal can get a little boring though, so I love to create fun and flavorful oatmeal bowls like this one! It’s super easy to make, very tasty, and definitely filling!
1/2 cup rolled/old fashioned oats
1-2 TBS cocoa powder
2 TBS coconut flakes
1 cup coconut milk (see notes)
1/2 banana, mashed or 1 TBS maple syrup/honey
Coconut flakes/shredded coconut
Almonds, chopped or slivered
Dark chocolate chips
Coconut milk yogurt
Combine oats, coconut milk, cocoa powder, coconut flakes and mashed banana/sweetener of choice in a small saucepan and cook on medium heat until cooked (about 5-10 min). Stir occasionally to avoid burning on the bottom.
Remove from heat and dish into a bowl.
Top with desired toppings (I used almond butter, coconut yogurt, coconut flakes and raw cacao squares).
If using full fat coconut milk, only use 1/4-1/3 cup coconut milk and add water for the rest of the liquid. I used 1 cup light coconut milk.
