
Looking for a super healthy breakfast recipe? This pancake recipe is super simple to prepare and tastes delicious! It’s full of whole grains and fiber, which help to increase satiety. Top these pancakes with some healthy fats and you’ll have a simple, delicious, and filling breakfast. This recipe works for both pancakes or waffles and it serves 2!
Ingredients:
2 cups rolled oats
2 cups non-dairy milk or water
1 ripe banana
2 TBS maple syrup or honey
1/4 tsp sea salt
1 tsp vanilla extract
Oil for cooking
Directions:
Place all ingredients except oil in a blender and blend until smooth.
Let the batter stand 15-20 minutes until it thickens. If the batter is too thick to pour easily, add a little more water.
Heat some of the oil in a frying pan or skillet.
Pour batter, by 1/4 – 1/2 cup, into pan and cook for 2-3 minutes on each side. Repeat until the batter is gone.
Top pancakes with toppings of choice!
Variations:
Try adding chopped nuts, chocolate chips or fresh berries to the batter (after blending)
Try topping with raw honey, maple syrup, raw almond or peanut butter, jam, shredded coconut, or fresh fruit.
