5-ingredient, no sugar added pumpkin oatmeal cookies! Try this recipe and make them for breakfast, dessert, or a mid-day snack! These 5-ingredient pumpkin cookies are about as healthy as they come. Made with just banana, oats, and pumpkin puree, these cookies are a great healthy breakfast, dessert or snack option. I love to meal prep them in advance and have them for an on-the-go breakfast or snack option during the week!
If you’re not a fan of chocolate chips in your muffins, try replacing the chocolate chips with chopped nuts of choice (pecans work great!). Not a fan of oat chunks in your cookies? Simply blend the batter before baking for a smooth cookie consistency! Here’s the recipe and the variation ideas. Makes 12 cookies!
Ingredients:
1 1/4 cups old fashioned or rolled oats
2 ripe bananas, mashed
1/2 cup pumpkin purée
1 teaspoon cinnamon
Handful of chocolate chips or chopped nuts of choice
Optional Variations:
2 tsp baking powder (for some extra cookie fluff!)
1/2 tsp pumpkin pie spice (for my pumpkin lovers!)
1/2 tsp nutmeg (why not add more fall spices?)
2 TBS maple syrup or honey (if you prefer your cookies a little bit sweeter)
1/4 cup milk (if you’re blending the batter you will need a little milk to thin it out)
Directions:
Mash bananas in a medium sized bowl until smooth and add oats, pumpkin puree, cinnamon and chocolate chips (if blending the batter, blend it BEFORE you add chocolate chips/nuts). You will need to add 1/4 cup milk of choice if blending the batter.
Shape cookies into balls using your hands and place on a tray lined with parchment paper.
Bake in the oven for 20 minutes at 400°.
