I love making and meal prepping healthy, easy and tasty recipes like this. These oatmeal cookies are full of healthy carbs, fats, and some protein — making them a filling and nutritious choice. Plus, they’re so delicious! Use your preferred nut butter choice (peanut, almond, cashew, etc.) and your preferred mix-ins (if not chocolate chips, try cacao nibs or raisins)! Here’s the recipe.
Ingredients:
1 1/2 cups rolled/old fashioned oats
2 large, ripe bananas
1/4 cup + 2 TBS tablespoons nut butter of choice
1/4 cup mini chocolate chips (or try cacao nibs, raisins or chopped nuts if you prefer!)
1 teaspoon cinnamon
1/4 teaspoon salt (optional)
1 tsp vanilla (optional)
Directions:
Mash bananas in a medium sized bowl until smooth. Add nut butter and mix until smooth and creamy.
Add remaining ingredients and mix well.
Shape cookies into balls using your hands and place on a tray lined with parchment paper.
Bake in the oven for 20 minutes at 400°.
