What I love about these brownies:
no refined sugar
won’t spike your blood sugar
satisfy chocolate cravings
no eggs so you can eat the batter
high in plant protein
dairy and gluten free
1 cup mashed sweet potato (cooked)
1/2 cup nut butter of choice (we love cashew or almond butter!)
1/4 cup maple syrup
1/4 cup cocoa powder
Combine ingredients in a small blender or food processor and blend/process until smooth.
Spray a small pan or two small ceramic dishes with cooking spray and spread the batter evenly.
Cook for 20 minutes at 350.
Dig in and enjoy!
We love to top our brownies with sliced berries and some coconut whipped cream. It’s the perfect pairing!
