
Three ingredient pancakes – gluten and dairy free! Ever get in the mood for pancakes but dismiss the idea because making them seems like too much work? With this recipe, you won’t have to! This recipe is super simple, easy to make, and requires only 3 ingredients! What I love about this recipe is that it is full of healthy fats and complex carbs, as well as some fruit, making it a satisfying and nourishing breakfast or snack. Read on the for the recipe!

This recipe serves one and makes six small pancakes or three medium sized pancakes!
Ingredients:
1 ripe banana
1/2 cup old fashioned oats
2 large eggs
1/4 tsp vanilla (optional)
pinch of salt (optional)
punch of cinnamon (optional)
Mix-In Ideas:
handful of chocolate chips (optional)
handful of berries (optional)
Directions:
Mash a banana with a fork in a medium sized dish
Whisk the eggs, oats, and other ingredients (if using) into the batter
Add mix-ins of choice (optional)
Heat some oil in a medium sized skillet on medium heat
Drop the batter into the skillet using a 1/4 cup measuring cup
Cook pancakes for about 2 minutes on the first side and then flip and cook for about another 2 minutes on the other side (time depends on the size)
Drizzle with honey, syrup or nut butter! Or simply top with butter.
In my opinion, adding nut butter on top makes these pancakes even more delicious! I love adding some almond butter on top and dark chocolate chips in the batter. Another option is adding peanut butter on top and blueberries inside!
