2-minute microwave chocolate lava cake! Keto, vegan, paleo, gluten free, dairy free and sugar free friendly, this lava cake is for everyone! Ingredients:
2 TBS flour of choice
2 TBS cocoa powder
1/4 tsp baking powder
1/8 tsp salt
3 TBS milk of choice
1 egg
2 TBS honey or maple syrup
1 TBS nut butter, coconut oil or grass fed butter (peanut butter is so good!)
1/4 tsp vanilla
Dark chocolate squares of choice
Directions:
Combine all ingredients in a large mug and mix well.
Transfer the batter to a small, greased ramekin. If you don’t have a ramekin, just pour the batter into a greased coffee mug.
Place a dark chocolate square in the middle of the batter. Push it down to the bottom of the dish/mug.
Microwave the cake for 1.5-2 minutes until fully cooked.
Remove the cake from the microwave and let it cool for a couple minutes.
Gently turn the ramekin upside down over a plate and remove the lava cake from the dish.
In a separate small bowl, combine another dark chocolate square (or 1 TBS chocolate chips) with 1 tsp coconut oil and microwave until melted.
Pour the melted chocolate over the lava cake for additional lava.
Add any toppings of choice (chopped nuts, berries/banana slices, ice cream, whipped cream) and enjoy!
