2-Ingredient Ice Cream!

2-ingredient ice cream (with endless flavor options)! Keto, vegan, paleo, gluten free, dairy free and sugar free friendly, this healthy ice cream is suitable for everyone! You can add whatever mix-ins and flavorings you like, just add them to the base recipe. Think vanilla, chocolate, peanut butter, mint, coffee, and more! Read on for flavoring ingredients and mix-ins!

Coconut Milk Ice Cream Base

  • 1-14oz can full fat coconut milk

  • 1/4 cup liquid sweetener of choice (regular or sugar free maple syrup, honey or another keto approved liquid sweetener— see notes below)

  • Pinch of salt (optional)

Directions:

  1. Blend your coconut milk and sweetener of choice in a high speed blender or whip in a large bowl with an electric mixer until smooth.

  2. Taste your ice cream mixture and add more sweetener if desired.

  3. If adding any flavoring ingredients, add those to the recipe now and blend/whip again until smooth.

  4. If adding any mix-ins, gently stir them in by hand (don’t blend or whip).

  5. Transfer your ice cream mixture to a freezer friendly dish (with a lid) and freeze for 6-8 hours. If you have an ice cream maker, you could transfer the mixture now and use that instead of freezing.

  6. Remove from the freezer after 6+ hours and let it sit out for 5-10 minutes before scooping.

  7. Serve and enjoy! Freeze any leftovers for later!

Notes:

  • Use a sugar free, liquid sugar replacement to keep it keto (if it’s not a 1-1 sugar replacement, adjust amount accordingly)

  • Use a high quality canned coconut milk brand or else the ice cream will turn out a bit icy

Flavoring Ideas:

  • Chocolate (add 1/4 cup cocoa powder and 1 tsp vanilla extract)

  • Vanilla (add 2 tsp vanilla extract)

  • Mint (add 1/2 – 3/4 tsp mint extract and 1/2 tsp spirulina to make it green)

  • Peanut Butter (add 1/4 cup peanut butter)

  • Coffee (add 1 TBS coffee grounds or instant coffee)

  • Pumpkin (add 1 cup pumpkin puree, 1 tsp vanilla extract, 3/4 tsp cinnamon and 3/4 tsp pumpkin pie spice)

Mix-In Ideas:

  • chocolate chips/chunks

  • chopped nuts

  • frozen fruit pieces

  • m&ms

  • cacao nibs

  • brownie pieces (try my recipe here)

  • edible cookie dough (try my recipe here)
